Steamed Butternut Squash

One of my favorite dishes at Thanksgiving is butternut squash. I like the simple flavors and texture. I’ve made it several times lately to share at gatherings, and several folks have asked for the recipe. So, by popular demand, here it is!

STEAMED BUTTERNUT SQUASH
Ingredients

1 lg. butternut squash
1/4 tsp. cinnamon
4 Tbsp. butter
1/4 c. water
1/4 tsp. salt
pepper to taste

Preparation

Wash & peel squash, remove seeds and fibers, and cut into 1-2″ cubes.
Place squash cubes in a 2 quart casserole or baking dish, then add water.
Cover and bake in microwave until tender but not mushy (10 – 12 minutes).
Sprinkle with spices and add butter.
Mash with a fork or potato masher leaving it a bit chunky.
Makes 6 servings.

Variations

  • Substitute nutmeg or allspice for the cinnamon
  • Add 1/2 c. extra sharp cheddar cheese

Careful not to overcook!

Actually, I generally guess at the quantities, but these will get you close.

If the squash isn’t moist enough after mashing, add a bit more water and mix.
